Today I offer you a chicken dish that’s different from the usual but at the same time very simple, with very few ingredients and extremely easy to make. Moreover, it takes just a little time to bring this fantastic dish with an all-Mediterranean flavor to completion!

As often happens, after the fateful question “what can we eat today“, which I always ask my wife Sara, her idea comes by naming only the ingredients that instantly inspire me and make me immediately envision the finished dish. In this case, the key words were “chicken” and “cherry tomatoes” which in a second made me visualize exactly what I would make.

Basically, chicken breast cut into chunks, first browned in a pan and then combined with cooked cherry tomatoes and finally garnished with abundant oregano and essential basil. A formidable taste that delighted both me and Sara, proving to be an excellent option both for lunch and dinner!

Ingredients

For Mediterranean Chicken

  • 10.5 oz cherry tomatoes
  • to taste extra virgin olive oil
  • 1 clove garlic
  • 2 tsp salt
  • 1 tsp sugar
  • to taste fresh basil leaves
  • 10.5 oz chicken breast
  • to taste oregano
  • a few fresh basil leaves

For Mediterranean Chicken

  • First, start by cutting the washed and dried cherry tomatoes in half. Then heat a pan with some extra virgin olive oil, add a crushed garlic clove, letting it infuse for a few minutes, and finally add the cherry tomatoes.

  • Continue cooking over medium heat for about 10 minutes and add 1 teaspoon of salt and 1 teaspoon of sugar. Occasionally toss the cherry tomatoes or gently stir with a spoon.

  • Meanwhile, while the cherry tomatoes are cooking, chop the chicken breast slices into pieces and get ready for the next step.

  • At this point, take a saucepan and heat a base of extra virgin olive oil, then, once hot, add the chicken and brown it very well for about 10 minutes or until the chicken is slightly amber.

  • Here, when the cherry tomatoes are soft enough, crush about half of them to release the pulp that will create a delicious sauce. To do this, I used a meat tenderizer.

  • To conclude, add the well-cooked chicken to the cherry tomatoes and let it infuse for a few minutes, mixing or tossing well. Let the ingredients meld together and prepare for the final step.

  • Finally, place a nice portion of Mediterranean chicken on a plate and garnish with plenty of oregano. Lastly, add fresh basil leaves and serve at the table!

Tip!

Cook the cherry tomatoes first on high heat and then halfway through on medium heat to make them soft and juicy.
