Paradise Muffins

Paradise Muffins.

Very soft, fragrant, and delicious.

Paradise muffins are little clouds of goodness: soft and tasty, they melt in your mouth, take very little time to prepare and are incredibly simple — try them and they’ll delight both adults and children.

Ingredients

  • 3 eggs (large)
  • 5/8 cup potato starch
  • 3/4 cup + 1 tbsp all-purpose flour (type 00)
  • 3/4 cup powdered sugar (70 g for a less sweet version)
  • 1/3 cup corn oil
  • 2 tsp lemon juice
  • grated zest of half a lemon (untreated)
  • Half teaspoon vanilla extract
  • 1 packet baking powder
  • 1 pinch salt
  • to taste pearl sugar
  • paper muffin liners

Tools

  • 1 Electric whisk
  • 1 Spatula
  • 1 Paper liners
  • 1 Sieve

Steps

  • Sift the flour with the baking powder and potato starch, set aside.

    Preheat the oven to 338°F.


    Beat the eggs with the powdered sugar, vanilla and a pinch of salt for 5 minutes — the mixture should become light, voluminous and frothy.


    Add the oil, lemon juice and lemon zest to the eggs and beat a little more.


    Turn off the beaters and gradually add the sifted flour, potato starch and baking powder mixture, folding gently with a spatula from top to bottom.


    Pour the batter into the muffin liners, leaving about 3/4 inch from the edge.

    Sprinkle a little pearl sugar on top.


    Bake in the hot oven at 338°F for about 20–25 minutes; adjust according to your oven and check doneness in the center with a toothpick.

  • Sift the flour with the baking powder and potato starch, set aside.
    Preheat the oven to 338°F.

    Fit the butterfly whisk into the bowl.

    Put the eggs with the powdered sugar, vanilla and a pinch of salt into the bowl — 3 min. / speed 3.


    Add the oil, lemon juice and lemon zest — 1 minute / speed 3.


    Turn off the Bimby and gradually add the sifted flour, potato starch and baking powder mixture, folding gently with a spatula from top to bottom.

    Pour the batter into the muffin liners, leaving about 3/4 inch from the edge.
    Sprinkle a little pearl sugar on top.

    Bake in the hot oven at 338°F for about 20–25 minutes; adjust according to your oven and check doneness in the center with a toothpick.
