Castagnole. The Castagnole are a typical carnival sweet, great for Mardi Gras but also for a snack with children, yet it is a delicious dessert for adults too. A sweet that truly everyone enjoys. If you prefer to use granulated sugar instead of powdered sugar, do it with the warm Castagnole!

Castagnole Ingredients
- 1 2/3 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 eggs
- 3 1/2 tbsp butter
- 1 packet vanillin
- 1 pinch salt
- 1/2 lemon zest
- 1 tsp baking powder
- 4 1/4 cups peanut oil
- as needed powdered sugar

Castagnole Steps
In a bowl, add the sifted flour with the teaspoon of baking powder, the packet of vanillin, salt, and sugar, then mix the ingredients and add the grated zest of 1/2 lemon.
Add the room temperature eggs, mix, and then add the semi-melted butter, making sure it’s not hot.
Blend the ingredients and then move everything onto a work surface, kneading well until you have a smooth ball.
Place a pot with the oil on the stove to bring it to temperature (338°F). Now, with the dough, create round balls about 0.6 inches in diameter.
Once the oil reaches a temperature of 338°F (if you don’t have a kitchen thermometer, test with a small piece of dough, if it starts to bubble when placed in the oil, it’s ready!), add the balls, not too many at a time, otherwise, they will stick together. Keep turning the balls with a slotted spoon to cook them evenly. Cooking time is about 4 minutes.
Using the slotted spoon, remove the castagnole and let them cool on kitchen paper towels, then sprinkle generously with powdered sugar or granulated sugar if you prefer.
