Decadent no-bake cheesecake with berries

Today I made a simple and quick no-bake cheesecake with berries. Creamy and indulgent, it’s the perfect summer dessert.

This dessert is not too sweet, extremely creamy and also perfect to keep in the freezer and enjoy later. Sour cream is starting to be used here in Italy as well, although it’s a typical product of more northern countries. I used a product from Meggle, a company that also produces other high-quality items for creating great dishes in our kitchens, such as Bavarian butter.

Sour cream is also excellent for savory recipes like the buckwheat blinis with salmon, also published on the blog!

Decadent no-bake cheesecake

Ingredients — DECADENT NO-BAKE CHEESECAKE RECIPE

  • 1 1/4 cups plain dry cookies (for the crust)
  • 4 tbsp butter, melted
  • 12 oz cream cheese
  • 1 1/4 cups heavy cream (whipping cream)
  • 3/4 cup sour cream (I used Meggle)
  • 1/2 cup powdered sugar
  • to taste mixed berries (I used strawberries, blueberries and raspberries)
  • to taste mint leaves

Preparation

  • Crumble the plain dry cookies in a food processor (or place them inside a food bag and crush them with a rolling pin or meat mallet).

  • Add the melted butter to the crumbs.

    Line an 8 3/4-inch (22 cm) pan with parchment paper and pour the buttery crumbs in.

    Press them well into the bottom with a spoon and place the pan in the refrigerator so the base firms up nicely.

  • For the filling, in a bowl mix the cream cheese with the sour cream.

    Add the sifted powdered sugar and finally fold in the whipped cream using a spatula and gentle movements so you don’t deflate the mixture.

  • Take the pan out of the refrigerator and pour the creamy sweet mixture over the crust to make the decadent no-bake cheesecake.

    Keep it in the refrigerator until serving, decorating the surface of the no-bake cheesecake with berries such as raspberries, strawberries and blueberries and a few mint leaves.
