Hasselback Chicken is a dish named after a Swedish restaurant that invented this accordion-style cut, especially known for potatoes.
The chicken breast is cut multiple times without actually separating the meat, approximately half an inch apart, and then stuffed with melting cheese, vegetables, and more!
A very appetizing second course, really delicious, of which I leave you the ingredients but not the measurements to give you just general indications for this tasty recipe that you will complete according to your personal taste…
PLEASE REMEMBER chicken meat should never be washed because contrary to popular belief, washing not only does not remove anything but increases contamination!!!!!
PAY ATTENTION ALSO TO COOKING which must be done properly so that the heat penetrates inside the meat and destroys its bacterial load; Escherichia Coli is killed at temperatures above 176°F; heat destroys any toxins produced.
A method not to use with this type of meat is the microwave oven because the heating of the meat is not done evenly and this does not ensure that the meat is healthy and suitable for consumption.
Variants Instead of dry-cured ham, you can use speck, instead of grilled zucchini, you can use arugula, which with its bitter taste goes very well, and instead of scamorza, you can use Asiago and/or mozzarella… The dish is simple but very exquisite, and I think it will appeal to the little ones at home as well!

- as needed grilled zucchini (I had them in the fridge!)
- as needed scamorza cheese
- as needed Extra virgin olive oil

Preparation HASSELACK CHICKEN RECIPE
Clean the chicken breast from cartilage and fat filaments and cut it in half.
On each half, make decisive cuts without cutting through the chicken meat.
Make additional cuts about 1/2 inch apart along the length of the meat piece.
In each slot, place the ham, the zucchini, and the scamorza.
Season with salt, pepper, and a little extra virgin olive oil.
Place the Hasselback chicken in a baking dish lined with parchment paper and bake in a preheated oven at 350°F for about 30 minutes, or according to your appliance’s characteristics.
Cook the Hasselback chicken to perfection, ensuring it remains moist and succulent.
Compose the plates by adding the juice that forms during cooking, add a sprig of thyme, and serve on the table still steaming hot, allowing the juices to redistribute in the meat for a moist and delicious result!
Serve with boiled potatoes, gratinated tomatoes, grilled zucchini (oops… I made quite a few yesterday), or a simple seasonal salad!
