Lactose-free, quick and simple, made with orange juice and zest, it is perfect for any time — from breakfast to an afternoon snack or as an after-dinner treat — wonderfully soft and light.

Ingredients
- 4 eggs
- 7/8 cup granulated sugar
- 7 tbsp vegetable oil
- 2/3 cup orange juice
- orange zest (grated from one orange)
- 1 1/2 cups all-purpose flour
- 1/2 cup potato starch
- 1 sachet baking powder
- powdered sugar (for dusting)
Preparation of the orange cloud cake
In a large bowl, beat the eggs with the sugar and the grated zest of one orange.
When the mixture is pale and fluffy, slowly stream in the vegetable oil and the orange juice while continuing to beat with electric beaters.Gently fold in the sifted potato starch and all-purpose flour using a spatula and delicate upward motions.
Also add the sifted baking powder, folding with a spatula until you obtain a smooth batter.Pour the batter into a 9-inch (22 cm) cake pan lined with parchment paper and bake in a conventional (static) oven at 356°F (180°C) for about 40 minutes, checking with a toothpick to ensure the cake is cooked through.
Remove from the oven, let cool completely in the pan, then transfer your orange cloud cake to a serving plate.
Dust with powdered sugar as desired and serve.
