Rice Crepes

Rice crepes are a tasty second course or single-dish meal, easy and quick to make and very delightful.

Made with already cooked rice — perfect for using up leftover rice from other preparations — and with just a few other pantry staples, they take only minutes to prepare and can be filled as you like with cold cuts and cheeses of your choice, or with vegetables, tomatoes, salad… the only limit is your imagination! Simple to make and pan-cooked, they are a perfect dish for a quick lunch or dinner, alone or with company.

Ingredients

  • 5/8 cup rice (already cooked)
  • 2 eggs
  • extra virgin olive oil
  • salt
  • pepper

Preparation of the rice crepes

  • In a large nonstick skillet, heat a few tablespoons of oil and add the already cooked rice.
    Let it flavor for a few minutes.

  • In a separate bowl, beat the eggs with a pinch of salt and a little pepper.
    Spread the rice evenly in the pan and pour the beaten eggs over it.

  • Cover the pan with a lid and cook over low heat until the eggs have set.
    Transfer the rice crepe to a plate, fill it as desired with cold cuts, cheeses and vegetables, fold it and serve.
