Ingredients
- 3 eggs
- 1 cup granulated sugar
- 6 tbsp vegetable oil
- 1/2 cup + 2 tsp milk
- 2 1/2 cups all-purpose flour
- 5 tbsp jam (mixed berries)
- to taste lemon zest
- 1 packet vanillin (optional)
- 1 packet baking powder

How to make the SOFT JAM RING CAKE
In a bowl, beat the yolks with an electric mixer together with the sugar, vanillin and the lemon zest.
Then pour the oil in a thin stream, followed by the milk at room temperature (not cold).
At this point add the flour and the baking powder sifted together beforehand — this step helps make baked goods softer.
Whip the egg whites you set aside until they form stiff peaks, then gently fold them into the batter without deflating it.
Pour the batter into a well-buttered and floured ring pan measuring 10 1/4 in, then add spoonfuls of jam on top.
Then bake your cake immediately for 40–45 minutes at 356°F in a conventional oven.
Remove from the oven and cool on a wire rack for cakes.

Soft jam ring cake — storage and tips
The soft jam ring cake can be kept for up to 3–4 days stored under a cake dome. Alternatively, it can be frozen. You can use the jam or preserve you prefer; alternatively, you can use Nutella. If you use Nutella, I recommend spooning small dollops onto a sheet of parchment paper and putting them in the freezer for about 20 minutes before placing them into the batter.
