The chicken rolls are an easy, quick and very tasty meat main course. I had ground chicken to cook and I thought of making these delicious little rolls of chicken that remind me a bit of sushi, that’s why I called them that and I even used chopsticks to eat them :D. Simple, stringy, tender and creamy, these chicken rolls are addictive, they have a golden, crispy crust and are delicious on their own and perfect served with your favorite sauces, also great as an appetizer. I filled them with cooked ham and cheese, but you can choose the filling you prefer, baked in the oven or cooked in the air fryer!

Ingredients
- 1 lb 2 oz ground chicken
- 2/3 cup scamorza (grated)
- 1/3 cup cream cheese (spreadable)
- 3 slices cooked ham
- 1 clove garlic
- 1 sprig parsley
- to taste salt
- to taste black pepper
- as needed cornmeal (for coating)
- as needed extra virgin olive oil
Steps
The chicken rolls are very simple and very quick to prepare. First, season the ground chicken with salt, black pepper and finely chopped garlic and parsley. If you have slices or a whole chicken breast, cut them into pieces and blend them in a food processor to obtain homemade ground chicken.
Spread the mixture between two sheets of parchment paper, forming a rectangle about 1/4 inch thick.
Remove the top sheet of parchment and fill the base with cream cheese, cooked ham and scamorza grated with a coarse grater, leaving a little margin along the upper and lower edges.
Cut the rectangle in half horizontally, cutting through the parchment as well, then roll the two parts starting from the center to form two small rolls.
Seal the ends well and coat the two logs using cornmeal, then place them on a baking sheet, spray or drizzle with a little oil and bake in a preheated oven at 392°F for about 20 minutes, until golden.
Tips:
Chicken rolls will keep in the refrigerator for a couple of days. You can also prepare them the day before if you use fresh (not previously frozen) chicken breast. You can fill them with the filling you prefer. Instead of cornmeal, plain breadcrumbs work fine.
