Ingredients to prepare the Pork tenderloin roast
- 1 lb 12 oz Pork tenderloin
- 1 glass White wine
- 3 sprigs Rosemary
- A few leaves Sage
- to taste Salt
- to taste Black pepper
- to taste Extra virgin olive oil
- to taste Whole peppercorns
How to make the Pork tenderloin roast
To start preparing the Pork tenderloin roast, remove the needles from a rosemary sprig and chop them finely; also chop 4 sage leaves. Take the tenderloin and rub it with extra virgin olive oil, season with salt and pepper, sprinkle it with the chopped aromatic herbs, and let it rest for half an hour.
Place the tenderloin in a loaf pan (I found the narrow, long pan very convenient, but if you don’t have one, use another suitable container). Arrange the tenderloin with all the aromatics in the container and cover it with the wine. Cover the container with plastic wrap and let it rest in the refrigerator overnight.
After the tenderloin has rested in the wine and aromatics, take it out and place it in a baking dish. Pour in the marinade wine and add the remaining rosemary sprigs, the remaining sage leaves, and the peppercorns.
Preheat the oven to 356°F. When it is hot, place the baking dish in the oven and cook for 40 minutes.
Turn the tenderloin and continue cooking for another 10–15 minutes. When the Pork tenderloin roast is cooked, remove it, let it cool, then slice it. Reheat for a few minutes before serving.
How to store the Pork tenderloin roast
Store it in the refrigerator for 2 days, or you can also freeze it for several months.
