Making homemade strawberry powder is one of those small gestures in the kitchen that really make a difference. Start with fresh strawberries, slice them thinly and dry them slowly to obtain a concentrated flavor and aroma, completely natural, suitable for flavoring creams and desserts of all kinds.
This is a strawberry recipe perfect for preserving this delicate spring fruit all year round and I started making it so I wouldn’t waste strawberries that would otherwise become overripe. Practically and without realizing it, it became one of the preparations I use most. This dried strawberry powder is practical, keeps for a long time and manages to give character even to the simplest recipes: a cream, a dough, a yogurt change completely with just one teaspoon.
Compared to fresh strawberries, the taste here is more intense, almost concentrated, and once mixed with a little liquid the color remains vivid and natural. It is perfect when you want to flavor desserts and creams, the strawberries are out of season, but you don’t want to give up their taste.

Ingredients to make homemade strawberry powder
- 28 oz strawberries (fresh (about 1.75 lbs or roughly 5 cups sliced))
- 2 tbsp lemon juice
- 1 tsp cornstarch
- 2 tsp powdered sugar

Steps to make homemade strawberry powder
To prepare the dried strawberry powder, wash the strawberries under running water and dry them well. Remove the stems and slice them about 1/8 inch thick (approximately 1/16–1/8 in), no more. Avoid extremely thin slices and try to make them all more or less the same thickness.
Drizzle a few drops of lemon juice over the slices and gently mix with your hands to distribute it evenly.
Arrange the strawberry slices on a baking tray lined with parchment paper, spaced out and not overlapping.
Give them a very light dusting of powdered sugar; you’ll need the rest later.
Bake at 176°F (80°C) in the oven, preferably convection, for about 5–6 hours, or until they are completely dry.
Collect the dried slices in the blender jar (I’ve included a link to the one I use in the tools) and blend until you obtain a uniform powder. Store the powder in an airtight container and use it as needed.
Storage notes and tips
Homemade strawberry powder keeps very well, but it is important to protect it from moisture to keep it dry and fragrant.
Store it in a well-sealed glass jar, preferably airtight, and keep it in a cool, dry place away from heat sources and direct light. In these conditions it can last several months without losing aroma and color.
If you notice it tends to clump, that’s normal: simply stir it or re-blend it to return it to the original texture.
Useful tips:
Make sure the strawberries are completely dried before blending them: even minimal moisture can compromise storage. For a finer powder, you can sift it after blending.
If you want a more stable result, you can add a small amount of powdered sugar while blending. Avoid storing it in the refrigerator: the humidity would spoil it.

It’s perfect for flavoring desserts and creams, but also for yogurt and porridge,
cake and cookie doughs, whipped cream and frostings, natural and colorful decorations.
Just a little is enough to give an intense flavor and a natural color to your preparations.
