This no-bake date and chocolate dessert came together without too much thought: one day I found soft, plump dates at the supermarket — the kind that already feel like a dessert on their own — and I took them home. Then, a few evenings later, while scrolling through Instagram reels, I saw an incredible chocolate dessert made with the same dates I had in the pantry and I wanted to try it, maybe to serve it for breakfast.
I rummaged through the ingredients, put together what I had and, without complicating things, out came one of those no-bake date desserts you’ll make again right away, simple and surprising and also gluten-free.
It’s got everything it needs: dates, nuts and melted chocolate on top and nothing more. And yet the result is one of those date and chocolate desserts that genuinely surprise, because they’re soft, full and satisfying. Cut into squares they become perfect date and chocolate bars, to keep in the fridge and grab whenever you fancy something tasty.
I like it because this no-bake date dessert is simple and always works: after dinner, mid-afternoon or as a homemade snack when you don’t want to turn on the oven. And it’s also a no-added-sugar dessert with dates, sweet enough without adding anything else.

Ingredients to make the date and chocolate dessert
- 1 lb 10 oz (about 30–32 Medjool dates) dates (meaty and large)
- 7 oz (about 3/4 cup) hazelnut paste (or peanut butter)
- 3.5 oz (about 2/3 cup) almonds (or other nuts)
- 2.5 oz (about 2/3 cup) dried cranberries (or raisins or other dried fruit)
- 7 oz (about 1 1/4 cups, chopped) dark chocolate
- 1.4 oz (about 1/4 cup) white chocolate (for decoration only)

Steps to make the no-bake date and chocolate dessert
For this recipe I used Medjool dates: large and meaty, they stand out for their deep golden-brown color and soft, enveloping texture, but they are also more expensive. Use the ones you have available.
To prepare this no-bake date and chocolate dessert, start with the dates: make a slit, remove the pit and open them in half.
Arrange them side by side in a pan lined with parchment paper, trying to cover the entire base.
Then press them with the bottom of a glass until you obtain a compact and even layer.
Cover with a sheet of parchment and press slightly again to level the base well, then flip it so the fleshy part is on top and the side with the skin is underneath.

At this point spread about 5.3 oz (about 2/3 cup) of hazelnut paste (hazelnut butter) over the surface, distributing it evenly. I used my homemade pure hazelnut paste, but you can substitute classic peanut butter.
Add the whole almonds and the dried cranberries, distributing them randomly but evenly.
Melt the dark chocolate in a bain-marie or microwave, then add the remaining hazelnut paste and stir until you get a smooth, glossy cream.
Also melt the milk chocolate and, using a piping bag or a spoon, create lines across the surface. With a toothpick drag the chocolate to achieve a marbled decoration effect.
Let it rest in the refrigerator for at least 1 hour, until the chocolate is well set.
Cut into squares and serve: you’ll get perfect date and chocolate bars, ideal as a no-added-sugar date dessert or as a homemade snack.
Storage notes and tips
Store this no-bake date and chocolate dessert in the refrigerator, well covered, for about a week or more. The chocolate will remain firm and the bars will stay easy to cut.
If you want a vegan version of this recipe, use only dark chocolate without animal-derived ingredients.
If you want to keep it longer, you can also freeze it already cut into squares: just take it out a few minutes before serving.
For the best result, use soft and meaty dates: they are the base of this no-bake date dessert and really make a difference in the texture.
You can easily vary the recipe: instead of almonds try hazelnuts or walnuts, or replace the dried cranberries with raisins or other dried fruit. The cream can also change by using peanut butter or another nut butter.
If you want a firmer result, press the dates well into the base: it’s the key step to obtaining perfect date and chocolate bars.
