  • 2 1/2 cups arugula
  • 10 datterini cherry tomatoes
  • 3 oz bresaola
  • 1.1 lb potatoes
  • 2 squeezes lemon juice

  • 5 tbsp extra virgin olive oil
  • to taste Grana Padano flakes

  • To prepare the bresaola salad with potatoes, arugula and cherry tomatoes, first peel the potatoes, cut them into pieces and boil them in water with coarse salt. Cook them for about 30 minutes, they should become tender. When they are cooked, let them cool; meanwhile prepare the salad. Wash the arugula well, dry it and put it in a large bowl. Wash and quarter the datterini cherry tomatoes, cut the bresaola into pieces, add the Grana Padano flakes and the boiled potatoes.

  • Now prepare the dressing. In a bowl put 5 tbsp of extra virgin olive oil, salt, black pepper and 2 squeezes of lemon juice. Mix well and then add the dressing to the salad. Taste, then add more seasoning if needed. Serve the bresaola salad immediately.
