Steps to make the truffles with Pan di Stelle, mascarpone and Nutella
To make the truffles with Pan di Stelle, mascarpone and Nutella, first take the cookies — I chose Pan di Stelle — and pulse them in a food processor until finely ground. Put them in a large bowl, add the mascarpone and mix the mixture well with a spoon. Finally add 2 heaping tablespoons of Nutella and mix again. Try to create a homogeneous mixture. It shouldn’t be sticky.
Refrigerate for at least 30 minutes. After that time, take the mixture out of the fridge, scoop out portions and shape into balls with slightly damp hands. Now roll the balls in cocoa powder. You can choose unsweetened or sweetened cocoa to taste; I chose unsweetened cocoa.
Place the balls in paper liners on a plate or tray and store in the fridge until serving.
Storage and tips
You can keep them in the refrigerator in an airtight container for a couple of days.
If you don’t like unsweetened cocoa, you can roll the truffles in sweetened cocoa or add chopped hazelnuts.
