Made from just two basic ingredients, they are naturally free of eggs, milk, butter, oil, baking powder and flour. The natural sweetness of ripe bananas pairs perfectly with the texture of rolled oats, creating a versatile snack that you can customize with your favorite nuts or enrich with a handful of chocolate chips added directly to the dough before baking. These cookies remain naturally softer and “chewy” compared to those made with flour and butter. If after a day they become too moist, just refresh them in the oven or air fryer at 302°F for 3–4 minutes to restore a bit of crispness. Ingredients
- 2 ripe bananas (about 7 oz peeled (about 200 g))
- 150 g rolled oats
- 2 tbsp almonds (chopped, or other nuts of choice)
- a pinch of cinnamon
- to taste 75% dark chocolate (for garnish)
Steps
Peel the bananas and mash them thoroughly with a fork in a large bowl until you obtain a smooth purée. Roughly chop the almonds with a knife.
Add the rolled oats, the chopped almonds and a pinch of cinnamon to the banana purée.
Mix everything well until you obtain a well-combined mixture. Let the dough rest for about 15 minutes — this allows the oats to absorb the moisture from the banana, making the mixture easier to handle.
Preheat the oven to 356°F and line a baking sheet with parchment paper. Form discs of dough (about 7 cookies, approximately 3 1/8 in / 8 cm in diameter), place them on the sheet and flatten them with the back of a spoon to make them thin.
Bake in a conventional oven for 15–20 minutes, or until they are golden and set. Remove from the oven and let cool completely on a wire rack.
Melt the dark chocolate in a bain-marie or in the microwave and garnish the surface of the cookies as you like.
