AYRAN the Turkish yogurt-based drink

Ayran is the nutritious and traditional drink of Turkey. By now, if you’ve been following me for a while you know about my passion for Turkish series and, consequently, for Turkish dishes. Getting to know a country I will one day visit always passes through its cuisine for me. I’m always curious to discover and taste new recipes and I was first won over by Borek, then by Ciorba, and finally here is a drink often mentioned on TV. A few simple ingredients in just minutes transform into a cool and refreshing drink perfect for hot days, to accompany spiced and spicy dishes or at any time of day. Ayran is suitable for everyone, both adults and children; you can also use lactose-free yogurt or plant-based yogurt. It is naturally gluten-free, rich in fiber, minerals and probiotics; ayran is not just a drink, it is a symbol of conviviality and tradition. Fresh, slightly salty and incredibly simple, it is born from the union of yogurt, water and a pinch of salt. Yet behind these three ingredients lies an ancient tradition that crosses centuries and borders. Ayran has deep roots in the nomadic cultures of Central Asia, where yogurt was a fundamental food for its preservability and nutritional value. Diluting it with water and adding a pinch of salt was a practical and smart gesture because it made the drink more thirst-quenching, replenished minerals lost through heat, and made it easier to consume while traveling. Over time, this drink spread throughout the Middle Eastern and Balkan areas, becoming a symbol of Turkish cuisine. Each region has developed slight differences in proportions or consistency, but the essence remains the same: yogurt, water and salt. In Turkey, ayran is much more than a simple drink: it is an integral part of everyday meals. It is served very cold, often in large glasses, to accompany rich and spicy dishes.

Ingredients for the Turkish yogurt drink

  • 1 cup plain natural yogurt
  • 1 cup water (cold)
  • 1/4 tsp salt

How to prepare Ayran

  • Pour the plain yogurt into the jar of a blender. Add the salt and the very cold water.

  • Turn on the blender for about one minute, until the mixture becomes homogeneous and a light foam forms on the surface. If you want a frothier consistency, extend the blending time.

  • Adjust the consistency to your preference. If you prefer it thinner, add a few tablespoons of water; if you prefer it thicker and creamier, add more yogurt.

Ayran keeps in the refrigerator for 2-3 days in a closed container. Before serving it is advisable to stir it well as it can separate naturally.
