Ingredients

  • 4 cod fillets (about 1 1/3 lb frozen)
  • 1.1 lb potatoes
  • 4 tbsp extra virgin olive oil
  • 1 clove garlic
  • 1 1/3 cups cherry tomatoes
  • 3 tbsp breadcrumbs
  • 1 sprig parsley
  • to taste salt

How to prepare Baked Cod with Potatoes

  • Let the cod fillets thaw and pat them dry with paper towels. Peel the potatoes, wash them and cut into cubes. Boil the potatoes in salted water for 10 minutes. Drain them.

  • Put the potatoes, the cod fillets cut into pieces, the washed cherry tomatoes halved or quartered, and one clove of garlic into a bowl. Add a pinch of salt and a drizzle of extra virgin olive oil. Mix with 2 tbsp. Transfer everything to a baking dish. Sprinkle with breadcrumbs and another drizzle of extra virgin olive oil.

  • Bake the Potatoes with cod in a preheated conventional oven at 374°F for 18-20 minutes. The cod will be ready when the flesh turns white, is tender and flakes easily with a fork. Do not overcook to avoid drying it out. Finish with fresh parsley.

    Yes, it is recommended to thaw them in the refrigerator for a few hours and pat them dry with paper towels. However, you can also cook them from frozen, slightly increasing the cooking time.

  • Can I cook cod and potatoes together?

    Yes, but the potatoes must be cut thin so they cook in the same time as the fish. Alternatively, you can start cooking the potatoes 10–15 minutes earlier and then add the cod.

  • Which spices pair best with oven-baked cod?

    Parsley, rosemary, thyme and lemon zest enhance the delicate flavor of cod. For a stronger note you can add sweet paprika or chili pepper.
