INGREDIENTS FOR THE PUMPKIN AND SAUSAGE TART

  • 1 sheet puff pastry (round)
  • 3 1/2 cups pumpkin
  • 10.5 oz sausage
  • 7 oz scamorza cheese
  • 1.4 oz Grana Padano PDO (grated)
  • to taste extra virgin olive oil
  • 1 white onion (small)
  • to taste salt
  • 1 sprig rosemary

HOW TO PREPARE THE PUMPKIN AND SAUSAGE SAVORY TART

  • Clean the pumpkin, remove the skin, seeds and inner fibers. Cut the pumpkin into small cubes. Also cut the sausage into small pieces. Pour 3-4 tablespoons of extra virgin olive oil into a skillet.

  • Add the thinly sliced onion. Add the sausage and the pumpkin. Season with salt and let cook over medium heat for 8-10 minutes, stirring often with a wooden spoon.

  • At the end of cooking add the chopped rosemary. Preheat the oven to 374°F. Roll out the puff pastry sheet directly on its parchment paper into a 10 1/4-inch diameter tart pan.

  • Prick the puff pastry with the tines of a fork. Pour the pumpkin and sausage onto the puff pastry base. Add the scamorza in small cubes and then generously sprinkle with grated Grana Padano.

  • Fold the pastry all around to form an edge. Bake the Pumpkin Savory Tart in the hot oven in conventional mode for about 25-30 minutes.
