The pizzaiola-style burritos in the air fryer are a tasty, quick and super practical idea—perfect for when you have little time but don’t want to give up flavor! They are prepared with only 3 ingredients in just a few minutes, becoming a true lunch- or dinner-saver to keep always within reach.
Crispy on the outside and gooey on the inside, they capture all the pizzaiola flavor in an even simpler and irresistible version. Cooking in the air fryer is very fast and makes them nicely golden without adding fat. You can also prepare them in a traditional oven, slightly increasing time and temperature: in the procedure below you will find both cooking methods, so you can choose the most convenient for you. Pizzaiola Burrito in the Air Fryer

Ingredients

  • 4 tortillas (or rollable flatbreads (piadine))
  • 7 oz (about 3/4 cup) tomato passata
  • 9 oz (about 2 cups shredded) mozzarella (for pizza)
  • 1 drizzle (about 1 tsp) extra-virgin olive oil
  • to taste salt
  • 1 clove garlic

Steps

  • First, prepare the sauce by placing the tomato passata in a small saucepan with one clove of garlic, a drizzle of olive oil and a pinch of salt, letting it simmer until it has reduced and become flavorful.

    Then take the tortillas (or rollable flatbreads) and spread a little of the sauce toward the top, add the mozzarella for pizza sliced, and start closing by folding the sides toward the center, then roll to form the burritos. Once ready, add more sauce on the surface as well.

    Cook in the air fryer at 356°F for about 7 minutes, or until they are hot and lightly golden, or in the oven at 374°F for about 15 minutes, adjusting times according to your oven. Enjoy!

Vale’s Tips

Tip: for perfect results we recommend not overfilling the burritos, so they will close easily and remain compact during cooking. If you want a more golden and slightly crispy surface you can brush them with a little oil before cooking. Enjoy them just made, when the mozzarella is still stringy!

Variations: you can enrich the filling by adding cooked ham, salami or hot dogs for an even more indulgent version. If you like bolder flavors, try sliced olives or a pinch of oregano in the sauce. For a heartier vegetarian version, add grilled vegetables like zucchini or eggplant.

Substitutions: instead of pizza mozzarella you can use scamorza or provola, while tortillas can be replaced with thin piadine or ready-made wraps. If you don’t have passata, you can also use a ready-made tomato sauce, preferably a thick one.

Important note: all the ingredients used are already cooked or ready (sauce, flatbread and mozzarella), so the air fryer doesn’t need to “cook” from zero but simply heat, melt and make everything golden and crispy in a few minutes.
