  • Cook over medium heat: after a few minutes small bubbles will appear on the surface — that’s the sign to flip them. Turn them gently and finish cooking on the other side until golden.

  • Meanwhile, prepare the strawberry sauce: chop the strawberries and put them in a small pan with a teaspoon of sugar and the juice of half a lemon.
    Bring to high heat and cook for about 4–5 minutes. At first the strawberries will release their natural juices, then this will reduce slightly, turning into a soft, slightly syrupy sauce with pieces of fruit still visible.
    When the pancakes are ready, arrange them on a plate and top with the hot strawberry sauce.
