Tasty garlic and tomato bruschetta!
There is nothing that says more “Italian summer” than the aroma of bread toasted over the coals meeting the freshness of ripe tomato.
The bruschetta with garlic and tomato is an evergreen classic, one of those simple recipes that, if prepared with the right care, becomes the star of any gathering.
This is absolutely one of my favorite preparations.
It’s the first thing I bring to the table when we host dinners at home with the cousins: a ritual that can’t be missed!
On those occasions, while the meat slowly cooks over the fire, the bruschetta kicks off the meal and disappears in no time.
Everyone loves them, young and old, because they capture the genuine flavors of our land.
They’re very easy to prepare and take very little time, but the real secret to making them special is all in the seasoning.
Here’s how I proceed to achieve an exceptional flavor:
The Bread: Choose a rustic bread sliced thick, ideal when grilled over embers or toasted in the oven until golden and crispy. I cooked them on the gas griddle!
The Tomato: Cut the tomatoes into small cubes. I prefer to do this a bit ahead of time to allow the flavors to meld.
The Marinade: Dress the tomatoes with plenty of extra virgin olive oil, salt, fragrant oregano and garlic.
Garlic—rubbed on the warm bread or finely chopped in the dressing—really enhances the tomato flavor on the bruschetta.
Let the mix rest for a few minutes: a delightful little sauce will form and soak into the bread crumb, making every bite an explosion of flavor.
They are the perfect appetizer: economical, quick and incredibly tasty.

Ingredients to make Tasty Garlic and Tomato Bruschetta

  • 9 slices bread
  • cherry tomatoes (or a firm, round red tomato)
  • to taste salt
  • 3 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 2 cloves garlic (crushed)

Preparation of Tasty Garlic and Tomato Bruschetta

  • Start preparing the bread for the bruschetta: take the slices of bread and cut them in half if they are long slices; if you’re using small round slices, leave them whole and you may use a few more slices.
    Toast them either under the oven grill, on the barbecue, or as I did… on the gas griddle.
    Prepare the tomatoes by washing and cutting them into very small pieces, place them in a bowl and dress with extra virgin olive oil, oregano, crushed garlic and adjust the salt.
    Mix this well and let it rest in the refrigerator for about 10 minutes before serving.

  • Once at the table, with the toasted bread arranged on a plate and the tomatoes in the bowl, everyone can dress their own bruschetta.
