Ingredients

  • 2 eggs
  • 1/2 cup granulated sugar
  • 3 tbsp sunflower oil
  • 1/4 cup milk
  • 1 1/3 cups all-purpose flour
  • 1/2 packet baking powder
  • 2 1/8 cups milk
  • 5 tbsp cornstarch
  • 3 egg yolks
  • 2/3 cup granulated sugar
  • to taste lemon zest (grated)

Steps

  • To prepare the soft tart, start with the base. In a bowl break the eggs and add the sugar, then beat with electric beaters until the mixture is pale and frothy. Add the oil and the milk in a thin stream, continuing to mix.
    Add the sifted flour together with the baking powder and work until you obtain a homogeneous batter without lumps.
    Butter and flour a soft tart pan (the one with the well) and pour the batter into it. Level the surface and bake at 356°F in a preheated oven for about 20 minutes. Do the toothpick test to check for doneness.
    Once done, remove from the oven and let cool completely, then turn it out onto a serving plate.

  • In the meantime prepare the pastry cream following the method you find at the link here (or use your favorite recipe) and let it cool with plastic wrap touching the surface.
    When the base is cold, fill the well with the cream and level it well. Wash and cut the fresh fruit as desired, then arrange it over the cream creating the decoration you prefer.
    If you like, you can brush the fruit with a little jam or glaze to make it shiny and more inviting.
    Let rest in the refrigerator for at least 30 minutes before serving.
