Ingredients for the Cold Yogurt and Strawberry Cake
For the base of this delightful cold cake, I used a leftover colomba (traditional Italian Easter cake), a tasty way not to waste anything! You can opt for sponge cake or crushed cookies (in that case, there is no need to soak them). The versatility of this dessert allows you to use whatever you have on hand to create a delicious base.
- 2 cups heavy cream (liquid whipping cream) (Found in the refrigerated section)
- 1 1/4 cups Greek yogurt
- 3/4 + 1 tbsp cups powdered sugar (icing sugar)
- 1 lb 2 oz strawberries
- as needed sponge cake (or other)
Tools for the Cold Yogurt and Strawberry Cake
- Bowl
- Hand mixer
Steps for the Cold Yogurt and Strawberry Cake
Whip the cream with the beaters. When it starts to thicken, add the powdered sugar and continue whipping.
Add the yogurt and gently fold with a spatula.
Wash and cut the strawberries into pieces, then add them to the cream.
In a baking dish, create a layer of cookies or sponge cake.
Cover with a layer of cream, then add another layer of base (cookies or sponge cake) and finish with the cream.
Decorate the surface with more fresh strawberries.
Put the cake in the refrigerator for at least 3-4 hours, or overnight.
Serve the cold cake in squares.
I hope this cold yogurt and strawberry cake wins you over with its simplicity and summery flavor. It’s perfect to end a lovely day or to treat yourself to something sweet without turning on the oven.
Don’t forget to let me know in the comments how you prepared it and whether you used any special base or decoration. I’m always curious to see your creations.
A cool and warm hug. Until next time.
