Dipping Cookies

Dipping cookies: crumbly, fragrant and perfect for starting the day sweetly.
With these dipping cookies it’s like going back in time: they are the traditional big cookies from the past, the good ones we ate as children. Great with milk, tea or to accompany coffee, these dipping cookies are exactly what you need to start the day in the best way.
They are very crumbly thanks to the butter shortcrust pastry and, if stored properly in a tin or cookie jar, they last for many days. They are very simple cookies which I decided to enrich with dark chocolate chips for an extra touch of indulgence.

Ingredients for the dipping cookies

  • 2 cups all-purpose flour (I used einkorn spelt flour)
  • 2/3 cup powdered (confectioners') sugar
  • 1 Egg (Large)
  • 7 tbsp butter
  • 1 teaspoon baking powder

Steps for the dipping cookies

  • Work the butter with the sugar and a pinch of salt until creamy. Add the egg, the flour, the baking powder and the flavoring. Mix and, if necessary, add 2–3 tablespoons of water to help combine. If you like, add dark chocolate chips. The dough should be compact.

    Wrap the dough in plastic wrap and place in the refrigerator for 30 minutes, preferably 1 hour. After resting, take small pieces of dough, form a ball and then slightly elongate it to form a tube-like rectangle.

    Place on a baking sheet lined with parchment paper and bake at 356°F in a preheated conventional oven for 20 minutes.

  • Once baked, the cookies will be very soft, but once cooled they will firm up on the outside.

Storage

Dipping cookies keep in a tin or cookie jar for 4 or 5 days. If you want to make them even more indulgent, you can melt chocolate in a bain-marie or in the microwave: once the cookies are cool, dip them in chocolate and let it set.
