Delicious Vanilla Cookies with Semolina Flour: learn how to make them with a few ingredients and a surprisingly delightful flavor. These little treats are very easy to prepare and their uniqueness comes from the flour used: I made them with re-milled durum wheat semolina flour. The taste will surprise you and it only takes a handful of ingredients for an excellent result.
They are very simple to prepare; the only precaution you must take is to let the dough rest in the refrigerator for at least 1 hour. This step is essential for the perfect outcome of the little cookies. I chose to make half of the cookies with a powdered sugar coating. If you want to follow this version, I suggest reducing the amount of sugar in the dough by about 1 1/2 tablespoons (as I did), otherwise they may become too sweet. Decide according to your personal taste.

Ingredients for vanilla cookies with semolina flour
- 2 1/8 cups re-milled durum wheat semolina flour
- 1/2 cup granulated sugar ((or 1/2 cup + 2 tbsp — about 120 g — if you prefer them without the powdered sugar topping))
- 1 1/2 tsp baking powder
- 7 tbsp vegetable oil ((about 3.5 fl oz — ~100 g))
- 2 eggs
- 1 vial vanilla extract
Steps for vanilla cookies with semolina flour
Beat the eggs with the sugar and add the oil. Add the semolina flour in several additions and the baking powder. Knead everything until the dough is homogeneous, cover with plastic wrap and place in the refrigerator to rest for at least 1 hour.
After this time, take the dough ball and form small balls. If you see the dough crumbling between your hands, don’t worry: it’s normal. Work the small piece quickly between your hands and then form the ball. At this point, you can decide whether to leave them plain or roll them in powdered sugar. Arrange the cookies on a baking tray lined with parchment paper. Bake at 356°F in a preheated conventional oven for about 13-15 minutes.
Once baked, let the cookies cool completely. Now they are ready to be enjoyed.
