Mini cookie cereal

Mini cookie cereal are tasty little cookie balls with dark chocolate chips, perfect for dipping in milk at breakfast. For these mini cookie cereal I used my cookies recipe. I made the cookies lactose-free and shaped them into small balls which I baked in the oven. Once baked and cooled, you won’t be able to wait to dunk the mini cookie cereal in milk!

Mini Cookie Cereal
  • Difficulty: Easy

Ingredients

  • 1 2/3 cups all-purpose flour
  • 1/3 cup packed brown sugar
  • 3.5 oz dark chocolate chips
  • 5 tbsp sunflower seed oil
  • 1 egg
  • 2 tsp baking powder
  • 1 tsp vanilla extract

Steps

  • To make the mini cookie cereal, pour the flour, brown sugar and baking powder into a bowl. Mix, then form a well in the center and add the vanilla extract, the oil and the egg.

  • Mix until combined, then fold in the chocolate chips last. Work the ingredients until you have a smooth, firm dough. Form a ball, wrap it in plastic wrap and chill in the refrigerator for one hour.

  • Then take the dough out of the refrigerator and shape it into small balls with your hands.

  • Place the cookies on a baking sheet lined with parchment paper and bake in a preheated oven at 356°F for 10 minutes, until golden.

  • Once baked, let them rest for 5 minutes, then transfer them to a wire rack and cool completely. Enjoy!
