Ingredients for the crispy puff pastry press

  • 1 puff pastry sheet
  • 6 medium potatoes
  • 3.5 oz speck
  • 4.2 oz cheese
  • to taste fine salt
  • to taste extra virgin olive oil
  • 1 teaspoon rosemary
  • 1 oz grated Parmesan

To prepare the delicious crispy puff pastry press with potatoes, watch the video recipe

Start by peeling the potatoes with a peeler. Grate them with a grater into a bowl. Season with salt, add chopped rosemary and grated Parmesan. Mix well to combine the ingredients. Roll out the rectangular baking tray lined with parchment paper and place the puff pastry, leaving about a 3/8-inch border, then cover with slices of speck and slices of cheese (I used Galbanino but you can also use scamorza) until the entire surface is covered.

Pour the potato mixture over and spread evenly with a spatula. Drizzle with a little oil and bake at 392°F for 25–30 minutes until the potatoes are golden. In air fryer mode, cook at 356°F for about 20 minutes.

You can store the sliced crispy puff pastry press with speck in an airtight container in the fridge for up to two or three days. Reheat before serving.
