- 2.5 cups zucchini (weighed, cleaned)
- to taste salt
- 1 tbsp extra virgin olive oil
- to taste garlic
- to taste mint

- Baking tray large non-stick
- Parchment paper
- Oven with grill
- Brush silicone
Preparation of the Recipe for zucchini that look fried
Let’s go cook
Wash and remove the ends of the zucchini. The slices should be about 3 mm thick (about 1/8 inch).
Sprinkle a little salt over them and let them rest for 20 minutes.
After the time has passed, place them in a colander and rinse under running water, then pat them dry with a clean towel.
Turn the oven on to grill at 374°F.
Place the parchment paper on the tray even if the tray is non-stick.
Arrange the slices close together, and cook for 5 minutes in the uppermost part of the oven.
After 5 minutes, carefully remove the tray and flip the slices to the other side. Continue cooking for another 5 minutes.
Now carefully remove the tray and brush the slices with the extra virgin olive oil without overdoing it but covering them well. I recommend, after dipping the brush in the oil, scraping the excess on the edge of the bowl.
Return the tray to the oven and cook for 3 minutes, checking that they don’t blacken too much; they should look like those in my photo.

Now all that’s left is to decide how to use them: simply as a side dish, or as a filling for sandwiches, in parmigiana layers, in the legendary Nerano, or in the more Sicilian pasta with zucchini.
The ready side dish can be kept in the fridge for 3 days and in the freezer for up to 3 months.
With the same technique you can make eggplant slices for a light Sicilian parmigiana (traditional).
