Ingredients

  • 1 cup (about 3.5 oz) walnuts
  • 2 eggs
  • 7 oz Greek yogurt
  • 3 oz 85% dark chocolate
  • 1/3 cup (≈2 oz) erythritol

Steps

You can use granulated sugar and any chocolate, even 50%.

You can add 50 g of butter or oil and reduce the yogurt.

  • Chop the walnuts with a food processor and place them in a bowl. Melt the chocolate in a double boiler. Grind the erythritol in the processor and keep a little aside for the final topping.

  • Add the eggs and the yogurt and mix, then add the melted chocolate and mix again.

  • Pour the mixture into an 8-inch pan lined with parchment paper and bake at 356°F (180°C) for about 20-25 minutes, or in the air fryer at 302°F (150°C) for 10 minutes, then lower to 284°F (140°C) and cook for another 15 minutes.

  • Do the toothpick test — the cake will remain moist inside. Remove from the oven and dust with powdered sugar.
