Slices with Peanut Butter and Jelly

Toasted bread slices or crispbreads, rice cakes, or whole grain Wasa, basically whatever you prefer as a base but spread with peanut butter and strawberry jam are delicious!

This is one of the most common combinations of fatty and sweet ingredients in America, known as the famous PBJ sandwich: Peanut Butter & Jelly or Jam sandwich. If you really want to do it like they do, you should take one of those thick slices of sandwich bread and spread 1 inch of chunky peanut butter, then on another slice, spread an equal amount of jelly or fruit jam, stick them together, and then bite! It’s indulgent, no doubt, but maybe there’s a way to enjoy this snack without too much guilt, and of course, here on Mangia senza Pancia, it couldn’t be missed!

Let’s start with choosing the base for this breakfast or snack: first, use an appropriate amount of bread or, as I prefer, Wasa slices. Then, we can use a healthier version of peanut butter, like this: Homemade Peanut Butter which is a valid alternative to the packaged one, not so much in terms of Weight Watchers points which are almost similar, but prepared with natural ingredients and no preservatives. And then there’s the jam: you can make your own compote, like this one: Strawberry Compote, but a tablespoon of light jam only adds 1 WW point. And here’s a breakfast that also contains a bit of protein, pair it with a soy latte and a fruit, and you’ll be satisfied until lunchtime! Let’s prepare it…

Ingredients

As mentioned before, you can vary the base of this breakfast using bread, crispbreads, Wasa, rice cakes… the choice is yours.

  • 2 crispbreads (or 2 wasa, 2 rice cakes, 1 oz of whole grain bread…)
  • 2 tsp peanut butter (1 heaping teaspoon)
  • 1 tbsp strawberry jam (light or strawberry compote)
  • Points per serving with light jam = 5 WW points
  • Points per serving with fruit compote = 4 WW points

Steps

  • This isn’t so much a recipe as a suggestion for a breakfast or even a snack that’s different from the usual. Here’s what the preparation entails: firstly, make sure to weigh the peanut butter carefully because it’s very easy to double the points!

    Spread the peanut butter on the slices and then do the same for the jam, distributing the peanut butter and jam evenly on both slices.

Honestly, I prepare this breakfast at the moment, it only takes a few minutes. But if you use Wasa or rice cakes, you can also prepare it in advance because both do not soften when in contact with peanut butter, while toasted bread and slices do.

  • Do I have to make the peanut butter myself or can I buy it?

    No, absolutely not. I suggest making it at home to avoid packaged food with various added sugars. But if you don’t have time, you can purchase these products, just make sure they are as natural as possible and obviously vegan. Here’s a recommendation:
