Sugar-free baked apples

Today I want to show you how I prepare sugar-free baked apples. It doesn’t take a degree to make them but I thought a dedicated recipe might be useful when you browse my blog looking for something sweet. I also explain how to prepare baked apples without using a conventional oven, using the Versilia stovetop oven or more quickly in the air fryer. This way you’ll also save energy…

Smart, right? If you have time use the stovetop method and you can enjoy them even in summer, when it’s too hot to turn on the oven. Or cook them more quickly in the air fryer. If you wish you can also use them to make a very light vegan dessert that’s delicious even if you’re on a diet. Serve a warm baked apple with a bit of yogurt and agave or maple syrup, add a sprinkle of cinnamon or cocoa and you’ll treat yourself without cheating.

And they are so good, whether you’re dieting or not you’ll love them. I’ve noticed that in the Versilia stovetop oven they dry out less and stay juicier. In fact I made six and, of course, I stored some and reheated them later: they remained excellent — I’m really satisfied! Let’s look at all the different cooking methods…

Ingredients

  • 6 apples (any variety works)
  • 1.8 oz soy yogurt (unsweetened (about 3.5 tbsp))
  • 1 teaspoon agave syrup (or maple syrup)
  • to taste ground cinnamon (or cocoa (don't overdo it))
  • Points per apple = 0 WW points
  • Points per filled apple = 1 WW point

  • Versilia stovetop oven

Steps

  • First line the baking pan you’ll use for the apples with parchment paper that has been wet and very well wrung out. In the photo you can see how to line the Versilia stovetop oven, which has a chimney in the center: just fold the sheet of parchment into quarters and cut a small corner, wet and wring the paper and press it against the walls of the oven, then trim any excess paper.

  • Wash the apples well and place them whole in the pan, side by side.

  • The Versilia stovetop oven is equipped with a little plate, a perforated disc like a flame spreader that channels heat into the central chimney of the oven: place this disc on the medium burner with the concave side facing up. Then place the stovetop oven on the disc making sure it fits well. Close the Versilia oven with its characteristic lid with holes that allow steam to escape. Turn the flame to high for 5 minutes, then lower it to just above the minimum and keep it like that for about 50 minutes, without ever opening the oven to avoid heat loss.

  • After about 50 minutes check the doneness of the apples. If they are not yet soft, close again with the lid and continue for another ten minutes.

  • The apples can also be cooked in the air fryer. Line the basket with a bit of parchment paper and place the apples. The number of apples will depend on the size of your basket, of course. Cook at 356°F for 20 minutes and then check. Continue cooking until the apples are perfectly done!

  • Preheat the oven to 356°F then bake the pan lined with parchment paper and the apples. After 50 minutes check the doneness: the apples should be tender otherwise continue cooking for another 10 minutes.

  • And here are the sugar-free baked apples: the aroma in the house is indescribable… You can enjoy them simply as they are — they’re already great without adding anything — or do as I suggest: put a warm apple on a plate and add a couple of tablespoons of yogurt. Pour 1 teaspoon of agave or maple syrup over the apple and yogurt and finish with a generous sprinkle of cinnamon or even cocoa!

Tips

You can use any variety of apples. I prefer sweeter ones like Royal Gala but the choice is yours!

If you want to make the soy yogurt a bit firmer, let it drain in the fridge overnight in a colander lined with cheesecloth or muslin over a bowl.

You can store them in the fridge in a glass container and then reheat for a few minutes in the microwave. They’ll be like new!
