Heat the extra virgin olive oil in a large skillet and brown the smoked ribs on all sides until lightly golden. Add the chopped onion and let it soften for a few minutes, stirring.

Cover with the lid and let simmer over medium-low heat for about 30 minutes, stirring from time to time and adding a little water if necessary.
