How to make Chicken Stew in a Pressure Cooker
Let’s start preparing the Chicken stew in a pressure cooker: peel the potatoes, wash them and cut them into pieces; clean the vegetables, cut the carrot and celery into small pieces and thinly slice the onion.
Remove any fat and small bones from the chicken breast and then cut it into bite-sized pieces.
Pour a few tablespoons of extra virgin olive oil into the pressure cooker, add the carrot, celery and chopped onion, then add the chicken pieces, the tomato puree, the potatoes, and a few ladles of vegetable broth.
Close with the lid, place over high heat; as soon as you hear the whistle reduce the heat and let cook for 20 minutes.
After the cooking time, turn off the heat, let the steam escape and when the safety valve has dropped open the pot and season with salt.
