- 1 roll puff pastry (rectangular)
- 2 sausages
- 1 head of broccoli
- to taste salt
- to taste extra virgin olive oil
- to taste red pepper flakes (optional)
- 1 clove garlic
- to taste white wine
- 7 oz smoked scamorza cheese
- to taste sesame seeds
How to make the broccoli and sausage savory pie
Let’s start preparing the broccoli and sausage savory pie. Clean the broccoli: remove any outer leaves, wash it and divide it into florets. Pour water into a pot, place it on the heat and bring to a boil; when it starts boiling add the broccoli florets and cook for about 5 minutes.
Now that you’ve boiled the broccoli, sauté it in a pan: add extra virgin olive oil, the garlic clove, and red pepper flakes and let them infuse for a few minutes; then add the boiled broccoli and season with salt. Let it sauté for about ten minutes, then transfer it to a plate and let it cool.
In the same pan where you sautéed the broccoli, brown the sausages: remove the casings and crumble them, then put them in the pan and cook over medium heat until well browned. When they’re browned, deglaze with white wine and let the alcohol evaporate; cook the sausage well for about ten minutes, then remove from the heat. Cut the smoked scamorza into thin slices or cubes.
Unroll the rectangular puff pastry and place in the center the sautéed broccoli, the smoked scamorza and the sausage. With a knife, cut strips about 3/8 inch wide. Close the top and bottom parts to create a border, then braid the strips to seal the savory pie well.
Brush the surface with a little water, sprinkle with sesame seeds, preheat the conventional oven to 356°F and when it is hot bake. Bake for 30 minutes. Serve the broccoli and sausage savory pie hot for a melty effect or at room temperature.
