Cod with potatoes and cherry tomatoes is a delicious seafood main course complete with a side, easy and quick to prepare.
A perfect dish when you have little time available and still want to prepare something tasty and healthy for family lunch or dinner, made with a few simple ingredients that are easy to find, fish-based and pan-cooked, light and wholesome.

Ingredients
- 11 oz Cod fillet (frozen)
- 11 oz Potatoes (about 2 medium potatoes)
- 10 Cherry tomatoes
- 1 clove Garlic
- 15 Black olives (pitted)
- Extra virgin olive oil
- Basil
- Salt
Preparation of cod with potatoes and cherry tomatoes
Peel the potatoes and slice them thinly.
Peel the garlic.
In a large skillet heat a little extra virgin olive oil and brown the garlic.Add the potatoes, cook them for a minute on each side and add the cod while still frozen.
Cover with a lid and let cook for about ten minutes.
In the meantime wash the cherry tomatoes and cut them in half.Add them to the cod along with the olives, season with salt and continue cooking for about ten minutes with the lid on, then uncover and cook a bit longer to reduce some of the cooking liquid, then turn off the heat and sprinkle with coarsely chopped basil leaves.
Serve your cod with potatoes and cherry tomatoes immediately.
