Today I made round stuffed zucchinis. A very simple but very tasty dish. Round stuffed zucchinis are perfect for a quick, light lunch or dinner. I cooked them in the air fryer, but you can also bake them in the oven or fry them in a pan — they’re delicious either way. They can be enjoyed hot or cold, so you can prepare them the day before, and I’ll tell you, they’re even better then.

Ingredients
- 4 round zucchinis
- 2 eggs
- 3 oz tuna in oil
- 2 tbsp grated cheese
- 1 pinch oregano
- 1 pinch nutmeg
- 1 pinch black pepper
- 1 pinch garlic powder
- to taste oil and salt
- 3.5 oz melting cheese (mozzarella)
Tools
- 1 Steamer for microwave
- 1 Bowl
- 1 Air fryer
- 1 Fork
Steps
Wash the zucchinis and steam them for about 10 minutes.
Cut off the tops and scoop out the zucchinis. Set aside the flesh.
In a bowl mix the eggs with the tuna, grated cheese, spices and the zucchini flesh.
Season with salt and fill the zucchini shells with the mixture.
Place a cube of cheese in the center of each zucchini.
Close each zucchini with its top and place them in the air fryer basket. Spray a little oil and cook for about 20 minutes at 374°F. If needed, extend the cooking time.
Delicious served hot or cold.

• vegetarian: omit the tuna and add rice.
• with meat instead of tuna.
