Apple and Hazelnut Skillet Fritters

Apple and hazelnut skillet fritters are so healthy, quick and tasty that they have become my favorite snack!

The ingredients are very few and can be mixed in a bowl with a fork in minutes, which makes them perfect even if we want to prepare them at the last moment to have them warm and crispy.

The aroma of apple and cinnamon spreading through the kitchen is truly amazing and will make you want to take a bite right away.

Ingredients

  • 1 apple
  • 1 egg
  • 1/2 cup plain natural yogurt (vegetarian also acceptable)
  • 1 teaspoon brown sugar (or regular)
  • 2 tablespoons extra virgin olive oil
  • ground cinnamon
  • 2 tablespoons chopped hazelnuts

Steps

  • Pour the egg, yogurt and sugar into a bowl; mix and add the apple peeled and grated julienne-style, the baking powder and the cinnamon.

  • Add the chopped hazelnuts and mix.

  • Lightly grease the skillet and cook over medium/low heat one ladleful of batter at a time, turning after about 3 minutes. Dust with a little powdered sugar.

Tips

I recommend storing them in the fridge, preferably in a closed container, and enjoying them slightly reheated in a skillet or in the microwave.

You can also flavor the fritters with vanilla or orange zest.
