The recipe for whole-wheat chocolate tozzetti was born from the need to satisfy a sweet craving while keeping an eye on sugars and without fats.

In short, the classic homemade recipe to bake in a few minutes with a really simple preparation. In fact, all the ingredients are mixed with a fork, in a bowl.

The result, rustic and satisfying thanks to the coarsely chopped chocolate, won us all over, also because they can comfortably be dunked in coffee with milk in the morning for breakfast.

There are few ingredients: whole-wheat flour, eggs, very little sugar, a pinch of baking powder, vanilla and, as mentioned, coarsely chopped dark chocolate.

Ingredients

This amount yields approximately fifteen cookies.

  • 1 7/8 cups whole-wheat flour (or type 2)
  • 2 eggs
  • 4.6 oz 70% dark chocolate
  • 2 tbsp brown sugar (or granulated)
  • 1 tsp baking powder

Steps

  • Pour the flour, sugar, vanilla and baking powder into a bowl and mix together.

  • Add the chocolate previously chopped with a knife, mix and then create a well to pour in the eggs (for convenience, I beat them first in a small bowl).

  • Combine the ingredients and form a ball. Cover tightly with plastic wrap and chill in the fridge for half an hour.

  • Shape into a log after chilling, and bake in the oven at 356°F for about 15 minutes. Remove from the oven, wait until slightly warm and then slice the tozzetti. Return to the oven for another 3–4 minutes per side, being careful not to burn yourself. Let the whole-wheat chocolate tozzetti cool completely before storing them in a cookie tin.

Storage

They keep in the pantry; if stored in a cookie tin they remain crunchy and fragrant for several days.

    Yes, but in that case you may need a few extra grams because liquid absorption is different.
