That’s also why I started making homemade spinacine, and it was a turning point. They’re simple, healthy, flavorful and, above all, free from that long list of ingredients you find in the packaged versions.
The great thing is you don’t need much: a bit of chicken breast, some spinach and a few other ingredients we always have in the kitchen. In ten minutes you have a soft, fragrant mixture, and once cooked they become crisp outside and super tender inside. Perfect for kids, a quick dinner or when you want something tasty but light.

Ingredients

HOMEMADE SPINACINE

  • 11 oz chicken breast
  • 14 oz spinach (about 13 cups fresh)
  • 1 egg
  • 1.41 oz Parmesan cheese
  • 2/3 cup breadcrumbs
  • salt

Steps

  • Chop the chicken by knife or in a food processor until you obtain a fine but not creamy texture.

  • Also chop the spinach.

  • In a bowl combine the chicken, spinach, egg, Parmesan, salt and breadcrumbs. Mix until you get a moldable mixture.


  • Shape the cutlets and pass them first through the beaten eggs and then through the breadcrumbs, pressing well.

  • Cook in the air fryer at 374°F for about 15 minutes, turning them halfway through.

Notes

Oven cooking: 392°F for 20 minutes, turning halfway.

Pan frying: a drizzle of oil, 3-4 minutes per side.

  • Can I use frozen spinach?

    Yes, just squeeze it very well to avoid the mixture becoming soggy.

  • Can they be made without eggs?

    Sure: add 1 tablespoon of yogurt or 1 tablespoon of chickpea flour to bind.

    Yes, use gluten-free breadcrumbs or fine cornmeal.
