Ingredients
HOMEMADE SPINACINE
- 11 oz chicken breast
- 14 oz spinach (about 13 cups fresh)
- 1 egg
- 1.41 oz Parmesan cheese
- 2/3 cup breadcrumbs

Steps
Chop the chicken by knife or in a food processor until you obtain a fine but not creamy texture.
Also chop the spinach.
In a bowl combine the chicken, spinach, egg, Parmesan, salt and breadcrumbs. Mix until you get a moldable mixture.
Shape the cutlets and pass them first through the beaten eggs and then through the breadcrumbs, pressing well.
Cook in the air fryer at 374°F for about 15 minutes, turning them halfway through.
Notes
Oven cooking: 392°F for 20 minutes, turning halfway.
Pan frying: a drizzle of oil, 3-4 minutes per side.
