Ingredients
- 14 oz (about 0.9 lb) Pork ribs
- 5 tbsp Extra virgin olive oil
- 2 Chili peppers (fresh) or to taste
- 1 tbsp Paprika
- 1 tsp Cumin
- 2 tbsp Mustard
- 2 tsp Pink peppercorns
- 1 sprig Rosemary
- 1 sprig Thyme
- 1 tsp Vinegar
- 1 clove Garlic
Preparation
To prepare the spicy pork ribs, in a bowl mix the extra virgin olive oil with the vinegar and mustard. Then add the chopped chili, the chopped garlic, and the rest of the herbs and spices. Mix until you obtain a sauce.
Put on latex gloves and generously spread the prepared sauce, massaging the meat and covering it well on both sides.
Place the ribs in a large bowl, cover and let rest in the refrigerator for at least 2 hours, preferably overnight.
Arrange the ribs in a baking tray with a rack on the bottom, cover the tray with aluminum foil and bake in a preheated oven at 356°F for 40 minutes. From time to time, remove the tray, baste the ribs with the marinade and turn them.
After 40 minutes, remove the foil, raise the oven to 392°F and brown the ribs. Salt, serve and enjoy!
