Then, a few evenings later, while scrolling through Instagram reels, I saw an insane chocolate dessert made with the very same dates I had in the pantry and I wanted to try it, maybe to serve for breakfast..
I rummaged through the ingredients, put together what I had and, without complicating things, out came one of those no‑bake date desserts you’ll make again right away, simple and surprising and also gluten‑free.
It contains everything it needs: dates, nuts and melted chocolate on top and nothing more. Yet the result is one of those dates and chocolate desserts that really surprise, because they’re soft, dense and satisfying. Cut into squares they become perfect dates and chocolate bars, to keep in the fridge and grab whenever you want something good.
I like it because this no‑bake date dessert is simple and always works: after dinner, mid‑afternoon or as a homemade snack when you don’t want to turn on the oven. And it’s also a no‑added‑sugar dessert with dates, sweet enough without adding anything else.

Ingredients to make the dates and chocolate dessert

  • 26 oz dates (plump and large)
  • 7 oz hazelnut paste (or peanut butter)
  • 3.5 oz almonds (or other nuts)
  • 2.5 oz dried cranberries (or raisins or other dried fruit)
  • 7 oz dark chocolate
  • 1.5 oz white chocolate (for decoration only)

Steps to make the no‑bake dates and chocolate dessert

For this recipe I used Medjoul‑style dates: large and plump, they stand out for their deep brown color and soft, velvety texture, but they are also more expensive. Use whatever you have available.

  • To prepare this no‑bake dates and chocolate dessert, start with the dates: make an incision, remove the pit and open them in half.
    Arrange them side by side in a pan lined with parchment paper, trying to cover the entire base.

  • Then press them down with the bottom of a glass until you obtain a compact, even layer.
    Cover with a sheet of parchment paper and press again gently to level the base well, then flip it so the fleshy side is up and the skin side is underneath.

  • Cover with parchment paper and press again lightly to get a base that is compact but still soft.
    At this point spread about 5 oz (approximately 2/3 cup) of hazelnut paste (hazelnut butter) on top, distributing it evenly over the surface. I used my homemade pure hazelnut paste, but you can replace it with classic peanut butter.
    Add the whole almonds and the dried cranberries, scattering them randomly but evenly.

  • Melt the dark chocolate in a bain‑marie or in the microwave, then add the remaining hazelnut paste and stir until you obtain a smooth, glossy cream.

  • Also melt the milk (or white) chocolate and, using a piping bag or a spoon, create lines across the surface. With a toothpick drag the chocolate to create a marbled decoration.
    Let rest in the refrigerator for at least 1 hour, until the chocolate is fully set.

  • Cut into squares and serve: you’ll get perfect dates and chocolate bars, ideal as a no‑added‑sugar date dessert or as a homemade snack.

Storage notes and tips

Store this no‑bake dates and chocolate dessert in the refrigerator, well covered, for up to a week or more. The chocolate will remain firm and the bars will be easy to cut.

If you want a vegan version of this recipe, use only dark chocolate that contains no animal derivatives.

If you want to keep it longer, you can also freeze it already cut into squares: just take it out a few minutes before serving.

For the best result, use soft, plump dates: they are the base of this no‑bake date dessert and really make a difference in texture.

You can easily vary the recipe: instead of almonds try hazelnuts or walnuts, or replace the dried cranberries with raisins or other dried fruit. The spread can also change, using peanut butter or another nut butter.
