Baked Paccheri

Baked paccheri are a tasty first course, easy to make and very delightful.

Simple to prepare, with almost all ingredients likely already in your pantry, they are ideal for Sunday lunch or a festive day and very easy to prepare even for those new to cooking.

Ingredients

  • 14 oz paccheri
  • 3 cups tomato purée (passata)
  • 11 oz mozzarella
  • Grana Padano (grated)
  • 1 onion
  • basil
  • extra virgin olive oil
  • salt

Preparation of baked paccheri

  • Peel and finely chop the onion.
    Heat a drizzle of oil in a saucepan, add the onion, let it brown and add the tomato purée.
    Cover with a lid and simmer over low heat for 25 minutes.

  • After the cooking time indicated, adjust the salt, add a few torn basil leaves and turn off the heat.
    Cut the mozzarella into small cubes.
    Cook the paccheri al dente in plenty of salted boiling water, drain them and toss with plenty of grated Grana Padano and some of the prepared sauce.

  • Pour half into a baking dish, sprinkle with the mozzarella cubes, cover with the remaining paccheri, the remaining sauce and a dusting of Grana Padano.
    Bake in a preheated conventional oven at 374°F for 25 minutes, then remove from the oven and let your baked paccheri cool slightly before serving.
