The couscous with broccoli and olives is a simple, wholesome main dish. It’s quick and easy to make; to add extra flavor I used curry, a clove of garlic and some chopped chili. With just a few simple ingredients you’ll prepare a tasty dish that everyone will enjoy!

Ingredients
- 1/2 cup Couscous
- 1/2 cup Water (boiling)
- 1 2/3 cups Broccoli florets
- 15 Olives
- 1 Chili pepper
- 1 clove Garlic
- 1 teaspoon Curry (to taste)
- to taste Extra virgin olive oil
- to taste Salt
Preparation
To make the couscous with broccoli and olives, wash and trim the broccoli. In a pan pour a drizzle of extra virgin olive oil, add the garlic and the chopped chili. Add the broccoli with the curry and place over low heat.
Cook for 10 minutes. The broccoli should be cooked but still crisp.
Place the couscous in a pot (or bowl) and pour the boiling water over it. Cover with a lid and let it rest for 5 minutes. Then, using a fork, fluff the couscous.
Then pour the couscous into the pan with the seasoning and stir to combine the ingredients.
Serve and, if desired, add some grated Parmesan. Enjoy your meal!
