Couscous with Broccoli and Olives

The couscous with broccoli and olives is a simple, wholesome main dish. It’s quick and easy to make; to add extra flavor I used curry, a clove of garlic and some chopped chili. With just a few simple ingredients you’ll prepare a tasty dish that everyone will enjoy!

Couscous with Broccoli and Olives

Ingredients

  • 1/2 cup Couscous
  • 1/2 cup Water (boiling)
  • 1 2/3 cups Broccoli florets
  • 15 Olives
  • 1 Chili pepper
  • 1 clove Garlic
  • 1 teaspoon Curry (to taste)
  • to taste Extra virgin olive oil
  • to taste Salt

Preparation

  • To make the couscous with broccoli and olives, wash and trim the broccoli. In a pan pour a drizzle of extra virgin olive oil, add the garlic and the chopped chili. Add the broccoli with the curry and place over low heat.

  • Cook for 10 minutes. The broccoli should be cooked but still crisp.

  • Place the couscous in a pot (or bowl) and pour the boiling water over it. Cover with a lid and let it rest for 5 minutes. Then, using a fork, fluff the couscous.

  • Then pour the couscous into the pan with the seasoning and stir to combine the ingredients.

  • Serve and, if desired, add some grated Parmesan. Enjoy your meal!
