The sandwich with broccoli and cutlet is a tasty mix of flavors, ideal to enjoy during a lunch break or a flavorful dinner.
To the classic sandwich with cutlet, this time I combined boiled broccoli that I then sautéed in a pan with extra virgin olive oil, garlic and anchovies. I filled the sandwich with a layer of cutlets and on top a layer of broccoli, and finished with slices of provola cheese and baked it to melt the cheese.
A special sandwich, perfect for cold days and sure to warm your heart!

Ingredients
- 5 oz Broccoli
- 2 Anchovies
- 1 clove Garlic
- to taste Extra virgin olive oil
- to taste Salt
- 11 oz Chicken cutlets
- 2 Eggs
- to taste Breadcrumbs
- 1 teaspoon Ground turmeric
- 1 teaspoon Curry
- to taste Chopped chives
- to taste Chopped parsley
- to taste Salt
- Frying oil
- 2 Rolls
- 4 slices Provola
- Sauces as desired
Preparation
To make the sandwich with broccoli and cutlet, wash and clean the broccoli, then cook them in plenty of salted boiling water. When the broccoli are tender, drain them using a slotted spoon or a colander.
In a pan, brown a clove of garlic with a drizzle of extra virgin olive oil and the anchovies. Then add the broccoli, season with salt to taste, and sauté for a few minutes. Mash the broccoli with a fork and remove the garlic clove. Cook over low heat for about ten minutes.
In a small bowl beat the eggs with a pinch of salt, while on a plate pour the breadcrumbs and add the turmeric, curry, chives and parsley, then mix everything with a spoon.
Salt the chicken cutlets, then dip each slice into the beaten eggs and finally into the breadcrumb mixture.
Fry the cutlets in hot oil, turning them on both sides, until golden; then drain them on paper towels.
Split the rolls in half and assemble: place the cutlets on the surface of the roll, then a generous layer of broccoli and on top the provola slices (two per sandwich).
Place the sandwiches in a preheated oven at 392°F for 10 minutes, just long enough to melt the cheese. Garnish with sauces as desired, serve and enjoy!
