No-bake Strawberry Cake

No-bake strawberry cake.

Simple, creamy, and irresistibly delicious.

The no-bake strawberry cake is very easy to prepare, pretty to serve and absolutely delicious. It’s a fresh, yummy dessert perfect for any occasion — try it and it will delight both young and old. It doesn’t need to be baked and you’ll impress everyone in very little time.

Ingredients

  • 10 oz plain cookies (for the crust)
  • 1/2 cup butter
  • 2 tbsp milk
  • 18 oz mascarpone (or ricotta for a lighter version)
  • 1 1/4 cups powdered sugar
  • 1 1/4 cups heavy cream (or a plant-based cream such as Hoplà)
  • 1 cup strawberries (for the filling)
  • 4 sheets gelatin sheets
  • 2/3 cup milk
  • 7 strawberries
  • to taste mint leaves

  • 1 Chopper
  • 1 Hand mixer
  • 1 Sieve
  • 1 Spatula
  • 1 Springform pan

Steps

  • Melt the butter in a small saucepan or in the microwave together with 2 tablespoons of milk, taking care not to burn it.

    Crush the cookies into fine crumbs and place them in a bowl.

    Add the melted butter to the crushed cookies and mix with a spoon.

    Press the mixture into the bottom of a 10 1/4-inch (26 cm) springform pan in an even, compact layer.

    Chill in the refrigerator.

  • Soak the gelatin sheets in cold water until softened.

    In a clean blender, puree the strawberries, then pass the purée through a sieve and collect the pulp in a bowl.

    In a stand mixer or with electric beaters, whip the cream together with the powdered sugar, then set it aside in the refrigerator.


    Heat 50 ml (about 3 1/2 tablespoons) of milk in a small saucepan; when it just begins to simmer, remove from the heat, add the softened gelatin sheets and stir until dissolved. Gradually add the remaining 100 ml (about 6 3/4 tablespoons) of milk, stirring continuously.

    Take the whipped cream from the fridge and add the milk mixture where you dissolved the gelatin, the mascarpone and the strawberry purée. Beat everything together until smooth, creamy and homogeneous.


    Take the crust out of the fridge and pour in the cream you just prepared, smoothing the surface.

    Chill in the refrigerator for at least 4 hours; I left mine overnight.

  • After the cake has set, remove it from the pan and place it on a serving plate.

    Rinse and dry the strawberries and the mint leaves.

    Slice the strawberries thinly.

    Decorate the cake with the strawberry slices and mint leaves.

    Serve immediately or keep the cake refrigerated until serving.
