Rustic puff pastry pinwheels.

Rustic puff pastry pinwheels are small appetizers that are beautiful to present, easy to prepare, and savory to eat. Perfect for aperitifs, as a starter, or on party buffets — make lots, I assure you they will disappear fast.

Ingredients
- 2 packages rectangular puff pastry
- 1 cup ricotta (or a spreadable cheese like Philadelphia)
- 5 oz salami
- to taste ground pepper
- as needed corn oil

- 1 Mezzaluna (herb chopper)
- 1 Spatula
- 1 Knife
- 1 Oven
Steps
Making rustic puff pastry pinwheels is very simple. Following the video above will make it child’s play; here I explain it with step photos.
Chop the salami with a knife or a mezzaluna.
Roll out one sheet of puff pastry on a work surface.
Spread it with ricotta (or the spreadable cheese).
Spread the ricotta evenly with a spatula.
Cover the ricotta with the chopped salami and a grind of pepper.
Close by covering with the other sheet of puff pastry.
Now take the oven rack and press it onto the pastry to create lines — you don’t need to cut through the pastry, just make surface grooves.
Turn the rack and do the same in the opposite direction to create a checkerboard pattern.
With a sharp knife cut 6 vertical lines along the whole pastry (you must cut through the top and bottom sheets to separate the strips).
Now cut horizontally, thus obtaining small squares.
You should get many separated little squares.
Using the handles of two forks or two spoons, pinch the center of each square by dragging the edges toward the center and press lightly to form little pinwheels as shown in the photo (the video above makes it clearer — it’s easier to do than to explain).
Preheat the oven to 356°F (convection).
Transfer the pinwheels to a baking sheet lined with parchment paper.
Brush them with corn oil.
Bake on the lower-middle rack of the preheated oven (the rack just above the base) at 356°F (convection) until golden, about 20 minutes, but this depends on your oven.
