Zucchini and cooked ham flan in the air fryer without pre-cooking and without béchamel, a simple and tasty idea to turn your meals into a light but flavorful dish. To speed up cooking time, in this case I chose to slice the zucchini very thinly with a mandoline while, to avoid using béchamel, I lightly brushed the zucchini with a drizzle of oil before seasoning them directly in the baking dish. - 2 zucchini (medium)
- 4 tbsp extra virgin olive oil
- 4 oz lactose-free mozzarella
- 3 oz Grana Padano, grated
- as needed breadcrumbs
- 4 slices cooked ham, high quality

Steps
To make the Zucchini and Cooked Ham Flan in the air fryer, first wash, dry and trim the zucchini. Slice them very thinly. To avoid pre-cooking the thickness should be like in the photo.
Lightly oil the bottom and sides of a baking dish and sprinkle a little breadcrumbs to prevent the flan from sticking. Form the first layer by slightly overlapping the zucchini. Drizzle with a little oil, season with a pinch of salt and garnish with two slices of cooked ham, about one-third of the mozzarella and roughly one-third of the grated Grana Padano.
Repeat this process until the final layer, on which you will place only Grana Padano and mozzarella.
Place the baking dish in the air fryer basket and, after preheating the oven to 338°F, cook the flan for 12 minutes or until the surface is nicely golden.
This recipe is perfect to prepare in advance and also to freeze, either cooked or raw depending on your needs. Serve it hot to enjoy all its crispness.

If I don’t have a mandoline and my slices don’t turn out very thin, how can I fix it?
You can quickly grill the zucchini on a griddle, or pass them through the air fryer for a few minutes. Obviously cooking times will vary but the final result of the flan will still be good.
