Quick zucchini pizzettes — an easy and fast recipe. They are the perfect solution when you want something tasty, light and very easy to prepare.
Zucchini recipes with zucchini have always been one of the symbols of summer. Also try the zucchini and potato burgers and my favorite, the zucchini scrocchiarella.
The pizzettes are soft and flavorful — they are made using ready-made pizza dough and are also super customizable. They win over anyone who wants to combine taste and simplicity in a recipe ready in less than 20 minutes.
They are ideal to serve as an appetizer, snack or a light main course. These pizzettes have become my go-to for summer dinners, perhaps served alongside puff pastry bites with sausage, spinach and stracchino.
If you prefer, you can replace or add ingredients — for example, add diced pancetta, or to make them vegetarian omit the cooked ham. You can also replace the pizza base with puff pastry or shortcrust pastry.

Ingredients
- 1 roll white focaccia
- 2 zucchini
- 5.3 oz mozzarella
- 4.2 oz cooked ham
- 1.1 oz Parmesan
How to make quick zucchini pizzettes
Unroll the dough, then divide it into 8 portions.
Fill with cooked ham and grated Parmesan, leaving about 3/8 inch from the edge free.
Slice the zucchini very thinly using a mandoline or slicer and arrange them over each portion, side by side.
At this point, top generously with mozzarella, add a drizzle of olive oil and bake in the oven at 374°F for about 12-15 minutes using the conventional (static) setting.
Variations and storage for quick zucchini pizzettes
You can replace the pizza base with puff pastry. Store the pizzettes in the refrigerator in an airtight container up to the next day.
